Creamy Avocado Salad
Adapted from the SmartKitchen
Serves: 2-3
Comment: I made this recipe up over the weekend using ripe avocados and fresh tomatoes. My guests all loved it and wanted the recipe. Avocados are high in heart healthy monosaturated fat, provide 4 grams of protein per avocado, and are good for the nerves, fatigue, hypoglycemia and urinary tract infections.
Ingredients:
2 ripe avocados, peeled and sliced
1 fresh tomato, chopped
½ red onion, chopped
1 garlic clove, crushed
1 tablespoon of low fat mayonnaise
Salt and Pepper to taste
Combine all the above ingredients in a bowl and stir unitl combined. Sere with whole-wheat pita, fresh veggies or corn chips.
