Orléans fitness expert publishes cookbook

Orléans resident Kathy Smart, a nutritionist at the Bob MacQuarrie Recreation Complex – Orléans, is trying to bring something that’s both healthy and palatable to east-end tables.

After her first cookbook sold out in just two weeks in 2006, the registered nutritional consultant decided to create more recipes for a second installment. The result is the recently published The Smart Kitchen Cookbook, which includes over 45 new recipes.

“Ever since the first (book), people have been after me to make a second,” Smart says, noting this book gets back to the basics with whole foods.

She explains the recipes all use whole grains and are low in fat. Even those with specialized diets will find something delectable inside. The book includes gluten-free, diary-free, wheat-free and diabetic-friendly foods, Smart says. There’s also something for the vegetarian or vegan, too.

A lot of the recipes, she adds, don’t have preservatives or refined foodstuff.

While there’s a real need for healthy recipes for those with food intolerances and allergies, Smart continues, this book is still for everyone.

“A family usually uses some eight to 10 recipes,” she explains. “It’s good to vary the diet.”

She adds that the more varied a diet is, the more vitamins people consume.

Smart, who has been working in the health industry for 12 years, teaches people that eating healthy can be simple and it’s not as “time consuming as you think.” The cookbook, she notes, includes very simple recipes that are quick and easy.

While a lot of cookbooks on the market focus on taste to the detriment of health, Smart says she has focused on both. Each recipe in the book, which was two years in the making, has been tried and tested.

Smart says she typically creates her recipes after visiting friends and trying foods she likes. She’ll then go home and create a healthy version of the same dish, she explains. The food is then tested on family, friends and colleagues, she continues, and based on feedback is tweaked to perfection.

“It takes a long time,” Smart says.

When asked, she notes that her favourite recipe is ‘Kathy’s famous energy cookie,’ a gluten-free calcium-packed snack made with brown rice flour and maple syrup. She adds that she’s also a fan of the pecan maple brown rice cookies.

Other recipes include soups, stews, main courses and salads.

Smart says she has seen hundreds of clients through the years change their life by making healthy food choices. As a result of those changes, she continues, they lost weight, found they had more energy and simply developed a more positive outlook on life.
