Curry powder is a mixture of many herbs and spices. Curcumin is the substance that gives turmeric its yellow color and is responsible for many of the health benefits derived from curry. Curcumin is a powerful antioxidant and anti-inflammatory agent, and has been show to fight cancer and reduce inflammation in the joints.

Honey Baked Curry Chicken (serves 4)

Ingredients

  • 4  4 ounce boneless, skinless chicken breast
  • 2 tablespoons of butter
  • 2 tablespoons of liquid honey
  • 1 teaspoon of curry powder
  • A pinch of sea salt

Directions

Preheat oven to 350 ° F.

Combine all of the above ingredients, excluding the chicken, in a small saucepan and heat on low heat until butter has melted.

Place chicken breasts in a lightly greased casserole dish.  Pour the sauce over the chicken and cook covered for 35 – 45 minutes.
